A family FAVORITE – This is great as is or with grilled shrimp or chicken breast on top!
- 2 cups dry quinoa
- 2 mangos, peeled,seeded and chopped
- 1 can black beans, drained and rinsed
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 sm red onion, chopped
- 1 small bunch of cilantro, chopped fine
- 2 -3 Tbsp olive oil
- juice of 1 lime
- 1-2 tsp cumin
- himalayan salt
- Cook quinoa with water according to package directions.
- Let cool and transfer to a large bowl.
- Add remaining ingredients and stir until combined.
