Black Bean Mango Quinoa Salad

A family FAVORITE This is great as is or with grilled shrimp or chicken breast on top!

Ingredients

  • 2 cups dry quinoa
  • 2 mangos, peeled,seeded and chopped
  • 1 can black beans, drained and rinsed
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 sm red onion, chopped
  • 1 small bunch of cilantro, chopped fine
  • 2 -3 Tbsp olive oil
  • juice of 1 lime
  • 1-2 tsp cumin
  • himalayan salt

Directions

  • Cook quinoa with water according to package directions.
  • Let cool and transfer to a large bowl.
  • Add remaining ingredients and stir until combined.
