Curried Broccoli Chickpea Salad

 

Looking for your new favorite summer salad?? Well look no further!! This salad delivers so much yummy goodness and flavor and is the PERFECT addition to your next bbq.

Ingredients

  • 6 cups broccoli  (chopped)
  • 6 cups bagged coleslaw mix
  • 1 cup shredded carrots
  • 1 can chickpeas (drained & rinsed)
  • 1/2 cup raisins
  • 1 bunch green onions (chopped)
  • 3/4 cup slivered almonds (toasted)
  • 1/2 cup tahini
  • 1 large lemon (juiced)
  • 1/4 cup warm water (to thin dressing)
  • 1 – 2 Tbsp pure maple syrup
  • 2 tsp yellow curry powder
  • 1/2 tsp ground ginger
  • 2 tsp ground turmeric
  • himalayan salt & black pepper (to taste)

Directions

  • Place the broccoli, carrots, coleslaw, chickpeas, raisins, green onion and toasted almonds into a large bowl.
  • Set aside.
  • In a small bowl whisk together the remaining ingredients to make the dressing.
  • Pour over salad mixture and stir to fully combine.
  • Serve as a side with your favorite protein.
