Ingredients
- 8 cups cabbage (shredded)
- 2 carrots (shredded)
- 1 red pepper (sliced in thin strips)
- 1/2 a red onion ( thinly sliced)
- 1 apple (chopped)
- 1 cup toasted cashews
Dressing
- 1/2 cup plain greek yogurt
- 1/2 tsp turmeric
- 1 tsp curry powder
- 1/2 tsp cumin
- 1/4 tsp ground ginger
- juice from 1/2 a lemon
*Mix together well.
Directions
- Place all ingredients in a bowl and toss.
- Add dressing and combine until fully coated.
- Enjoy!
* Great as a side, on it’s own, or topped with grilled chicken or shrimp.
