- 1 medium sized sweet potato (baked in skin)
- 3 oz cooked grilled chicken breast (sliced)
- 1/2 cup roasted broccoli
- 2 Tbsp plain greek yogurt
- 2 Tbsp green onion (chopped)
- 1 Tbsp shredded cheese
- himalayan salt & pepper
- Slice hot potato down the middle, being sure to leave it intact.
- With a fork mash the insides.
- Top with chicken, broccoli, greek yogurt, chopped onion and cheese.
- Sprinkle with salt & pepper.
