Peanut Butter & Banana Chocolate Chip Oat Cookies

Ingredients

  • 3 large very ripe bananas, mashed
  • 1/2 cup natural peanut butter
  • 2 Tbsp coconut sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups large flake oats
  • 1 tsp baking powder
  • cinnamon
  • 1/4 tsp himalayan salt
  • 3/4 cup mini chocolate chips

Directions

  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mash the bananas with a fork. Stir in the peanut butter,coconut sugar, and vanilla extract. Mix until well  combined and smooth.
  • In a separate bowl, stir together the oats, baking powder, cinnamon, and salt. Add the dry ingredients to the wet ingredients and stir until combined.
  • Add in the chocolate chips and stir.
  • Drop spoonfuls of mixture onto prepared baking sheet.
  • Bake for 12-14 minutes or until cookies  are golden brown.
  • Transfer to a wire cooling rack and cool completely.
