Not only are these “little cabbages” (as I like to call them) #delicious, they are so good for you! Brussels sprouts are high in Vitamin K, Vitamin C, Folate and Vitamin A, as well, a good source of Manganese, Potassium, B6, and Thiamin.
- 1 1/2 pounds Brussels sprouts, trimmed and cut in half lengthwise
- 2 Tbsp Olive oil
- Himalayan salt & pepper
- Preheat oven to 400 degrees.
- Gently toss brussels sprouts with the olive oil, and season with salt & pepper.
- Place on a baking sheet lined with parchment paper and roast for 25 mins or until tender.
