Simple Mediterranean Salad

I absolutely LOVE this salad!! Not only simple to make, but so yummy! Great on its own or paired with a grilled protein.

Ingredients

  • 4 cups quinoa (cooked)
  • 3 cups grape tomatoes (halved)
  • 2 long cucumber (chopped)
  • 1 can chickpeas (drained & rinsed)
  • 1/2 cup sliced kalamata olives
  • 1 cup crumbled feta cheese
  • 1/4 cup pine nuts (optional)
  • 3 Tbsp, avocado oil
  • 1-2 Tbsp Italian seasoning
  • himalayan salt/black pepper

Directions

  • Place all ingredients into a large bowl and gentle stir to combine.
