- 4 large handfuls baby spinach leaves
- 1 apple (thinly sliced)
- 1/4 cup red onion (thinly sliced)
- 2 Tbsp dried cranberries
- 1/4 cup toasted pecans
- 1/4 cup apple cider vinegar
- 2 tbsp extra virgin olive oil
- 2 tsp dijon mustard
- himalayan salt & black pepper (to taste)
- Place dressing ingredients in a small bowl and whisk to combine.
- Place all salad ingredients in a large bowl and toss with dressing.
