Tex-Mex Egg Bake

Ingredients

  • 2 cups large flake oats
  • 1/2 lb ground turkey
  • 1 Tbsp chilli powder
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 1 red pepper (chopped)
  • 1 orange pepper (chopped)
  • 1 yellow onion (chopped)
  • 2 large handfuls baby spinach
  • 1 cup black beans (drained & rinsed)
  • 6 large eggs
  • 1 1/2 containers (500 ml) egg whites
  • 1/2 cup milk
  • 1 cup cottage cheese
  • 1 cup organic shredded cheese
  • himalayan salt & pepper

Directions

  • Preheat oven to 400 degrees.
  • Prepare a 9×11 pan with coconut oil spray.
  • Sprinkle with large flake oats and set aside.
  • In a large frying pan, cook turkey until no longer pink.
  • Add cumin, garlic powder, and chilli powder.
  • Add peppers, onion and spinach and sauteed until soft.
  • Stir in black beans and remove from heat.
  • Place on top of oats.
  • Place eggs, milk, egg whites and cottage cheese in a high powdered blender (or in a bowl).
  • Blend until completely mixed.
  • Pour over turkey mixture.
  • Top with shredded cheese and salt & pepper.
  • Place in the oven and bake for 30 -35 mins or until set, firm to touch and the top is golden brown.

Variation…..

Ingredients

  • 1 onion (chopped)
  • 1 red pepper (chopped)
  • 1 yellow pepper (chopped)
  • 1 cup frozen organic corn
  • 1 cup black beans
  • 8 whole eggs
  • 1 1/2 500ml containers of egg whites
  • 1/2 cup unsweetened almond milk
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 2 tsp garlic powder
  • Himalayan salt & black pepper
  • 1 cup cheese (shredded)

Directions

  • Preheat oven to 400 degrees.
  • Prepare large rectangle pan with non stick spray (I like coconut oil).
  • In a large frying pan, saute onion, peppers, corn and black beans until softened.
  • Place eggs, whites, almond milk, and spices in a blender and blend until fully combined.
  • Transfer onion mixture to prepared pan and spread out evenly.
  • Pour egg mixture over top.
  • Sprinkle with salt & pepper.
  • Top with cheese.
  • Place in the oven and bake for 30 -35 mins or until set, firm to touch and the top is golden brown.
