Unstuffed Pepper Soup

Ingredients

  • 2 lb lean ground beef
  • 2 green peppers chopped
  • 2 red peppers chopped
  • 1 large yellow onion chopped
  • 2 large handfuls of baby spinach
  • 2  (28 oz) cans diced tomatoes
  • 2 (14oz) cans tomato sauce
  • 2 cups organic veg broth
  • 1 Tbsp worcestershire sauce
  • 1 Tbsp garlic powder
  • 1 Tbsp italian seasoning
  • 1 tsp cumin
  • himalayan salt and black pepper to taste
  • 3 cups cooked rice

Directions

  • In a large pot, cook ground beef until no longer pink.
  • Add peppers, onions and spinach to the mixture and cook until tender.
  • Stir in tomatoes, tomato sauce, broth, and spices.
  • Bring to a boil then reduce heat and simmer on low for 30 minutes.
  • Stir in cooked rice and serve.
