Ingredients
- 2 lb lean ground beef
- 2 green peppers chopped
- 2 red peppers chopped
- 1 large yellow onion chopped
- 2 large handfuls of baby spinach
- 2 (28 oz) cans diced tomatoes
- 2 (14oz) cans tomato sauce
- 2 cups organic veg broth
- 1 Tbsp worcestershire sauce
- 1 Tbsp garlic powder
- 1 Tbsp italian seasoning
- 1 tsp cumin
- himalayan salt and black pepper to taste
- 3 cups cooked rice
Directions
- In a large pot, cook ground beef until no longer pink.
- Add peppers, onions and spinach to the mixture and cook until tender.
- Stir in tomatoes, tomato sauce, broth, and spices.
- Bring to a boil then reduce heat and simmer on low for 30 minutes.
- Stir in cooked rice and serve.
