- 2 long cucumbers (thinly sliced)
- 4 cups grape tomatoes (slice lengthwise in half)
- 1/2 red onion (thinly slice)
- 1/4 cup apple cider vinegar
- 2 Tbsp extra-virgin olive oil
- 2 tsp dijon mustard
- 1 tsp honey
- himalayan salt & black pepper (to taste)
- 2 Tbsp dried dill
- Place cucumbers, tomatoes & onion in a large bowl.
- In a small bowl, whisk together the remaining ingredients until combined.
- Pour mixture over salad.
- Gently toss to coat.
