Simple Avocado & Egg Toast

Mmmm a perfectly BALANCED meal, for anytime of the day.

Ingredients

  • 1 hard boiled egg, chopped
  • 2 hard boiled egg whites, chopped
  • 1/3 -1/2 of an avocado
  • spinach leaves
  • grape tomatoes
  • himalayan salt & black pepper to taste

Directions

  • Place egg, egg whites and avocado in a bowl and mash with a fork until combined.
  • Top whole grain bread (toasted) with spinach leaves.
  • Top with avocado & egg mixture.
  • Top with sliced tomatoes.
  • Sprinkle with himalayan salt & pepper.
