This one has of organic greens, green beans, match stick carrots, grape tomatoes, cucumbers, roasted baby potatoes, avocado, raw pumpkin seeds and grilled chicken. Drizzled with a simple balsamic, avocado oil and dijon mustard dressing.
*For the dressing, simply place the ingredients below into a mason jar, secure with a lid, shake, shake, shake, and pour on the goodness. Store leftovers in the fridge for up to 7 days.
- 1/4 cup balsamic vinegar
- 1 crushed clove of garlic
- 1 tsp dried oregano
- 2 tsp Dijon mustard, optional
- 3/4 cup extra-virgin olive oil
- himalayan salt & ground black pepper to taste
