Do you have a Friday night family tradition? Ours has forever been nacho or pizza night – something about either one just seems to bring the family together for a night of laughter, we often follow it by an intense game or two of UNO.
Ingredients
- 2 1/4 cups spelt flour
- 1 package of active yeast
- 2/3 of very warm water
- 1/4 tsp himalayan salt
- 3 Tbsp avocado oil
- 1 Tbsp coconut sugar
- 1/2 of a butternut squash (peeled & cut into 1 inch pieces)
- 1 yellow onion (sliced into thin wedges)
- 1 tsp himalayan salt
- 1 tsp black pepper
- 1 1/2 Tbsp avocado oil
- 3 Tbsp basil pesto
- 1.5 cups of sliced mushrooms (sauteed and browned)
- 3 large handfuls of baby spinach (sauteed and wilted down)
- 3/4 cup shredded mozzarella cheese
 Directions
- Heat oven to 400 degrees.
- In a large bowl combine dough ingredients.
- Knead for about 4 mins
- Roll out onto floured surface to desired thinness.
- Place on baking pan and set side.
- In a medium bowl, mix squash, onion, salt, pepper and oil until combined.
- Spread mixture onto parchment lined baking sheet.
- Place in the oven and roast about 20 minutes, stirring occasionally, until squash is tender.
- Remove from the oven and set aside.
- Cook mushrooms & spinach in a little oil in a pan over medium high heat until mushrooms are browned and the spinach is wilted down.
- Spread pesto over prepared pizza shell.
- Top with squash mixture, spinach and cheese.
- Place in the oven and bake 10 -15 minutes or until edges are golden brown.
- I like to broil for a couple of minutes too to brown the top.
- Let stand 5 minutes before serving.
