Simple Breakfast Cookies

 These Simple Breakfast Cookies are a total GAME CHANGER – perfect for those crazy mornings – and to change it up – simply switch out the cranberries with another dried fruit and the seeds with another or some raw nuts.


  • 2 ripe bananas (mashed)
  • 1/3 cup natural peanut butter (warmed)
  • 1/4 cup honey
  • 2 eggs
  • 2 cups large flake oats
  • 1/4 cup ground flax
  • 1/2 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1 tsp cinnamon
  • pinch of himalayan salt
  • 1/4 cup mini chocolate chips


  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • In a large bowl mix together all of the ingredients until fully combined.
  • Spray the inside of a 1/3 measuring cup with non stick spray.
  • With prepared cup, scoop out mixture and place on prepared pan.
  • Flatten down with back of spoon.
  • Bake for about 15-20 minutes until edges are lightly browned.
  • Let cookies cool on baking sheet before moving to an airtight storage container.
