Simply Made Cinnamon Raisin Loaf

- 2 ½ cups spelt flour
- ¼ cup coconut sugar + 2 tsp
- 2 Tbsp cinnamon
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp himalayan salt
- 1 1/2 cups unsweetened almond milk
- 2 organic eggs
- ¼ cup coconut oil (melted)
- 1 Tbsp pure vanilla extract
- 1 cup raisins
Directions
- Preheat the oven to 350 degrees.
- Prepare a large loaf pan with coconut oil spray.
- In a large mixing bowl, add the flour, 1/4 cup sugar, cinnamon, baking powder, baking soda, and salt.
- Stir to combine.
- In a separate bowl whisk together egg, coconut oil, almond milk and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until just combined. Do not over-mix.
- Fold in the raisins.
- Pour the batter into prepared loaf pan and smooth over the top.
- Sprinkle with cinnamon and remaining 2 tsp of coconut sugar.
- Place in the center of the oven and bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from pan.
