Simply Made Cinnamon Raisin Loaf

Ingredients

  • 2 ½ cups spelt flour
  • ¼ cup coconut sugar + 2 tsp
  • 2 Tbsp cinnamon
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp himalayan salt
  • 1 1/2 cups unsweetened almond milk
  • 2 organic eggs
  • ¼ cup coconut oil (melted)
  • 1 Tbsp pure vanilla extract
  • 1 cup raisins

Directions

  • Preheat the oven to 350 degrees.
  • Prepare a large loaf pan with coconut oil spray.
  • In a large mixing bowl, add the flour, 1/4 cup sugar, cinnamon, baking powder, baking soda, and salt.
  • Stir to combine.
  • In a separate bowl whisk together egg, coconut oil, almond milk and vanilla extract.
  • Pour the wet ingredients over the dry ingredients and stir until just combined. Do not over-mix.
  • Fold in the raisins.
  • Pour  the batter into prepared loaf pan and smooth over the top.
  • Sprinkle with cinnamon and remaining 2 tsp of coconut sugar.
  • Place in the center of the  oven and bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool slightly before removing from pan.
