I absolutely LOVE this salad!! Not only simple to make, but so yummy! Great on its own or paired with a grilled protein.
- 4 cups quinoa (cooked)
- 3 cups grape tomatoes (halved)
- 2 long cucumber (chopped)
- 1 can chickpeas (drained & rinsed)
- 1/2 cup sliced kalamata olives
- 1 cup crumbled feta cheese
- 1/4 cup pine nuts (optional)
- 3 Tbsp, avocado oil
- 1-2 Tbsp Italian seasoning
- himalayan salt/black pepper
- Place all ingredients into a large bowl and gentle stir to combine.
