I was craving lemon pie and this hit the spot! Yummy, healthy and great any time of the day.
Ingredients
BOTTOM
- 4 egg yolks
- 1 Tbsp pure maple syrup
- zest of 2 lemons
- juice of 1 lemon
- 2 Tbsp coconut oil
MIDDLE
- 2 cups plain greek yogurt
- 4 Tbsp chia seeds
- 4 tsp pure maple syrup
- 2 tsp pure vanilla extract
TOPPING
- 1/2Tbsp coconut oil
- 1/3 cup large flake oats
- 2 Tbsp raw sunflower seeds
- 1/2 cup unsweetened shredded coconut
- zest 1 lemon
- pinch of himalayan salt
- 1 Tbsp pure maple syrup
Directions
- In a small sauce pan, whisk together egg yolks and maple syrup until combined.
- Place the saucepan over a medium to low heat and add theremaining ingredients.
- Stir until the mixture thickens.
- Once thickened remove from the heat and pour into a bowl and allow to cool.
- In a separate bowl, mix together yogurt, chia seeds, syrup and extract until combined.
- One combined, place in the fridge.
- Add oats, sunflower seeds and coconut to a frying pan and cook over medium heat until toasted (about 1 – 2 minutes).
- Add lemon zest and salt and stir continuously until the mixture is golden brown and toasted.
- Remove from the heat and mix in the maple syrup.
- Spoon the lemon mixture, evenly into 4, 1 cup mason jars.
- Top with yogurt mixture.
- Cover with the oat mixture.
- Enjoy.
